Ingredients
Your favourite feta cheese
Fresh rocket leaves
Fresh or frozen baby broad beans
Fresh or frozen baby peas
Few mint leaves, chopped
Cuisinescene White Wine Vinaigrette OR make a dressing using good quality olive oil, white wine vinegar and honey
Rock salt
Black pepper
Method
1. If using frozen beans and peas, place in boiling water and cook for 2-3 minutes only, then immediately plunge into iced water to refresh. When completely cold, drain well.
2. If using fresh beans and peas, shell them and cook in boiling water for 1 minute only, then refresh in iced water. Remove the outer skins from the broad beans.
3. Toss the veges gently with the rocket , mint and dressing.
4. Crumble the feta cheese and sprinkle over the top on the salad.
5. Serve immediately.
Variation
Use pieces of hot-smoked salmon instead of the cheese—add a squeeze of lemon juice too.
