Combine any or all of these ingredients in a shallow bowl:
Finely sliced red or green cabbage or lettuce
Carrots, julienned or coarsely grated
Green beans, raw or quickly blanched and refreshed
Sliced spring onions or chives
Fresh or frozen baby peas*
Toss together with Cuisinescene White Wine Vinaigrette OR a dressing made with good quality olive oil, white wine vinegar and honey. Season with freshly ground rock salt and black pepper.
Tear fresh mozzarella cheese into chunks and scatter over the salad.
Enjoy for lunch with fresh crusty bread, or serve as a side salad with grilled meats or fish.
*If using frozen peas, place in boiling water and cook for 1-2 minutes only, then immediately plunge into iced water to refresh. When completely cold, drain well. Fresh peas can be used raw.
